During the Maple in the County festival in Prince Edward County, Ontario, we had the opportunity to visit several sugarbushes. Our first stop was the small, traditional-style Sugarbush Vineyards.
We walked past the vineyard into the woods where we found a hundred tapped maple trees. It was the quintessential maple syrup experience. We went from bucket to bucket looking for sap. And much to our surprise, not only was it clear, it was also tasteless.
When we finished our walk, we came across the proprietor boiling down the sap over an open fire. Unfortunately, there were no maple syrup samples.
